Can't forget the deer

Paul got his first deer - and it was basically in our backyard!  A couple weeks ago the three of us decided to go hiking on the mountain behind our house (our neighbors own 20 acres behind us and then the rest is county land).  Seeing that it is deer season and Paul has his hunting license, he set out on the hike ready to find a deer.  He gave me ear protection and instructed me that if he gave the "signal" I was suppose to put the ear covers on and cover Claire's ears.  Could you just imagine?!  Fortunately it got to be dinner time and Claire and I headed back down the mountain before a deer was found.  About 6:15 I got a phone call, with the hushed words, "I just shot a deer..." And so began the long process of getting the deer down the mountain and preparing it for the butcher.  No details necessary.  All I know is we have one happy hunter in our house!
Well I have 70ish pounds of deer meat coming my way...anyone have some great venison recipes?!
